Meatball Soup

A while back I mentioned that there were four soups/stews I wanted to make.  We've had several soups since then but only the potato soup from my list.  With the weather being what it is and the fact the soup bowl was full I decided to make meatball soup today.  Since daughter informed me she didn't want to try it I decided to add tomatoes anyway.  There's no real recipe, but I'll share what I used.

soup bowl (leftover green beans and green peas from fridge)
2 cans of diced tomatoes (pantry)
water and chicken bouillon
black pepper
dried onion (long term storage)
dried bell pepper  (long term storage)
dried corn (from bits basket)
1 can black beans (pantry)
two large handfuls of mini meatballs
garlic powder
dried broccoli (from bits basket)

I'll be serving the soup with grilled cheese sandwiches.  Nothing fancy, but a warm filling meal.

  1. Looks delicious, Shara. I like elbow macaroni in soup. And I like meatballs in it too. I found a good deal on Hamburger this week and I was thinking about making a meatball stew soon. :)

    1. When I was in elementary school they always served veggie soup with macaroni noodles. I loved it and for some reason it seemed just right for a cold, snowy day.

  2. Sounds good. Soup is probably on the menu for many as this Artic blast is hitting the US!

    1. I know you guys are used to the cold, but snow and ice is a rare thing for my area. My poor outside kitties were standing there looking up at the sky like "what in the world"...lol. We made them a warm secure place and pointed them in that direction. They seemed to get the hint and didn't come back out until this morning.
