Planning for February

I'm thinking -- dangerous I know (at least according to my hubby)...lol -- that I want to continue to eat down the pantry for February. So I will inventory everything and see how many meals we have and go from there.   With that in mind I've cleaned out the refrigerator and started the meal plan.


Near Christmas I bought a large Danish ham to keep on hand just in case.
You never know when you could be called on to feed a crowd or just contribute to a meal.
The price was right and I knew we could use it if we didn't need it over the holidays.

We've eaten several meals from it.  
Ham slices, sandwiches, and quiche.
So Sunday morning I served a few slices along with cheese toast and fried eggs.
 I decided it was time to portion the rest up and freeze it.

4 slices for a breakfast meal
1 portion for quiche
1 portion for potato soup
1 portion for bean soup
1 portion for fried rice

Hopefully I'll get the menu pulled together in the next day or two.

    1. I seem to be more apt to use it up if I have it already portioned out. Funny how much difference that makes.
