A simple mixture of vegetable broth
diced tomatoes
tomato sauce
green lima beans
potatoes
carrots
celery
onion
touch of garlic powder
touch of salt
Nothing fancy. You'll notice one jar is light in color.
I fell short on my tomatoes, but I'll just add a can when I make soup...no biggie.
I checked my book(s) and canned them at 10 lbs of pressure for 50 minutes.
That was the time required for the lima beans, which had to be cooked the longest.
One jar didn't seal and its contents are in the crockpot
along with a few add ins for today's lunch.
This soup starter will be great for both vegetarian soups and/or to add meat to for a heavier soup.
On the chatter side, today is one of those odd days where I more or less have the day off.
I have phone duty, but don't have to go in to the office. Kind of nice.
I've finished up the first of my washcloths for my bathroom. Since the pattern is easy it is easy to pick up and put down. I'm having a harder time working on bigger projects.
I've also done the housework, except dusting and vacuuming.
I'm leaving those for daughter's morning chores.
Supper tonight wasn't on the menu, but it is what I'm craving.
We'll be having cabbage, potatoes, carrots, etc. roasted
and I'll make pork chops to go with the veggies.
I'll be absent some next week since I have three doctor's appointments.
Lord willing I am getting to the end of this process and won't have to be going back constantly.
I'm pleased to say my cholesterol, blood pressure and blood sugar have dropped.
They're not perfect and I am still on the medications, but they are definitely a lot better.
Oh these are so nice to have on hand, Shara! I love pantry assets like this because you can open up the jar and have food ready much sooner than freezer assets, which need thawing.
